There are several ways to quickly switch between Light and Dark themes without going through the system settings. But they are based on the same console command:
osascript -e 'tell app "System Events" to tell appearance preferences to set dark mode to not dark mode
I prefer to use BetterTouchTool, a program for fine-tuning the behavior of the mouse, keyboard and touchpad.
BetterTouchTool already has a ready-made rule “Toggle Dark Mode”. It is enough to choose a keyboard shortcut and specify the corresponding rule.
I also found a small free utility called Night Owl that can switch the theme color depending on the time of day.
